BOOTLEG Pork Ribs - Smoker and Grill Recipes

BOOTLEG style ribs on the smoker. At BOOTLEG, we love using the smoker with the BOOTLEG spices! All for research, of course! These pork St. Louis style ribs have a two day dry rub before going on smoker. Our focus groups (aka relatives and friends) loved them and didn't mind the meat coma. Smoker and grilling recipes and pictures below.

Rack of Ribs on the Smoker – Total cook time is 4.5 hours

  • Coat ribs with the BOOTLEG seasonings of your choice. 
  • Refrigerate at least 2 hours; we recommend 24 hours.
  • Put on smoker for 2.5 hours at 250 degrees Fahrenheit.
  • Pull and wrap ribs in aluminum foil. Add a ¼ stick of butter to the foil and a dusting of brown sugar on top of the ribs.
  • Put wrapped ribs back on smoker for 2 more hours at 250 degrees Fahrenheit.

Rack of Ribs on the Grill - Total cook time 2 – 2 ¼ hours

  • Coat ribs with BOOTLEG seasonings of your choice.
  • Preheat grill to medium high and prepare for indirect grilling:
    • For a gas grill, turn off one or two of the center burners.
    • On a charcoal grill, move the coals to the sides, leaving the center open. Set up a drip pan to avoid flair ups.
  • Place the ribs bone-side down, on the cooler part of the grill.
  • Cover and cook, rotating rib racks once, until the meat is tender and pulls away from the bones.

Country Style Grilled Ribs

  • Coat ribs with BOOTLEG seasonings of your choice.
  • Grill over direct heat with the grill covered, turning every 10-15 minutes.
  • When meat temperature reaches 150 degrees Fahrenheit, remove from grill.
