Chili Relleno Bootleg Style!  Chili Relleno Bootleg Style!

Homemade red sauce with Barrelhouse Blend. Poblano chili filled with beef mix and mozzarella cheese. Crema with Rum Rummer 6, cilantro, lime and green onion.

Red Sauce Ingredients and Cooking Instructions:
2 cloves garlic
1/2 white onion chopped
1/8th cup olive oil
3 Roma tomatoes
5.5 oz can V8
dash of honey
1/8 tsp cayenne pepper
In a sauce pan, sweat onion and garlic for a few minutes, then add all the other ingredients and bring to a boil. Mix with immersion blender until smooth.  Simmer for 30 minutes to reduce to desired thickness.

Cilantro Lime Cream Sauce Ingredients and Cooking Instructions:
1 cup sour cream
1/2 cup cilantro
2 Tbs lime juice
1 Jalapeno
3 green onions
2 Tbs Rum Runner 6
1 tsp salt
1/4 cup water
2 Tbs Olive Oil
Put all ingredients in container and blend with immersion blender.

Meat filling Ingredients and Cooking Instructions for 2 Chili Rellenos:
1/2 pound hamburger
3 green onions
1 tsp salt
1/8 cup red sauce
1/8 cup Cilantro lime sauce
Brown everything together in Sauteed pan.  

Chili Relleno Preparation:
Roast Poblano peppers under broiler until black on all sides. Place in closed plastic bag for 15 min. Remove from bag and peel skins. Slit peppers on one side and remove seeds and veins. Salt the inside of peppers to taste. Add 1/8th cup mozzarella cheese in the bottom of the peppers, then fill peppers with meat filling. Place red sauce on bottom of baking dish. Place peppers in dish and sprinkle with mozzarella cheese. Broil peppers until cheese is brown. Remove from oven then drizzle red sauce and cilantro lime sauce on top. Enjoy!
